Chocolate Zucchini Brownies

Sadly my zucchini plant died, but a friend shared a couple with me so I was able to make a few favorite recipes.

This recipe is from Simply in Season. I love this cookbook as the recipes are just like I like to cook with seasonal produce and healthier ingredients like yogurt and whole wheat flour. This is one of the rare times I'm sharing a recipe with NO adaptions!

Plus, it won the favor of my family (probably because of the chocolate and sugar!) With these on the counter, Ed thinks he needs one before going to bed so that he gets enough vegetables for the day!

1 cup flour
3/4 cup whole wheat flour
1/3 cup cocoa
1/2 tsp baking soda
1/2 tsp salt

Combine in bowl.

1 egg
3/4 cup sugar
3/4 cup brown sugar
1/2 cup plain yogurt
1/2 cup oil
1 tsp vanilla

Combine in separate bowl and beat well.

2-3 cup shredded zucchini

Stir dry ingredients, zucchini and egg mixture together.  Spread into greased 9x13 pan.

1/2 - 1 cup chocolate chips
1/2 cup nuts (optional)

Sprinkle on top of batter. Bake at 350 degrees for 35 minutes.
