The last two years, I've basically quit purchasing snack foods, including crackers, at the grocery store. I've been trying to eliminate processed foods, as well as lower our food bill, and found we really could live without them. I buy snack foods now only as a special treat.
But that does not change the fact that we really do enjoy crackers. So, my next goal was to (you are going to be shocked) make my own!!! I've been collecting cracker recipes for almost a year but never took the dive to try it! When I began testing recipes for Peter Reinhart's new cookbook and he sent me a whole grain cracker recipe, I knew I wasn't going to put it off any longer! So this week I did!
It really was not hard. Actually, it was quite easy. Not near as difficult or time consuming as baking bread! The texture was crisp, much like a Wheat Thin. But the flavor was astonishing! I could not let them alone! Maybe (as Mr. Reinhart says) homemade crackers will be the next baking revolution like artisan bread baking in the last decade! And snacking could hardly be more guilt free. The recipe I used had whole wheat flour, olive oil, seeds, and honey! (Sadly, since the cookbook has not been printed yet, I'm not at liberty to share the recipe. It is killing me, so please don't make it worse by asking!)
