Here is the whole wheat bread recipe, written for the convenience of those who have a smaller mixer. This recipe will make three loaves.
2 ½ cup water
1/3 cup oil
1/3 cup honey
½ T salt
1 T soy lecithin (optional)
1/8 tsp vitamin C (optional)
¼ cup vital gluten (optional)
1 egg
1 ½ heaping T instant dry yeast
5-8 cups whole wheat flour (or mixture of white and whole wheat)
Combine water, oil, honey, salt, soy lecithin, vitamin C, vital gluten, and egg. Mix.
Add 3 cups of flour. Mix. Add yeast. Add flour until dough doesn't stick to sides of bowl.
Knead for 8 minutes with kneading hook on medium speed or by hand.
Form dough into loaves. Place in greased pans and allow to rise until double.
Bake bread at 350 degrees for 20-25 minutes. Cool.
